2023 Great Southern Riesling
Old vine riesling from Hayview Vineyard in the Great Southern.
The fruit was pressed, without any crushing, followed by natural fermentation on full solids, in a grand total of 5 barrels; 3 x seasoned French oak barriques (60%) and 2 x stainless-steel barrels (40%). The wild fermentation and lees stirring has introduced complexity, yet the crisp natural acidity has been retained by inhibiting malolactic fermentation throughout the four-month maturation period.
Fruit for this single vineyard wine was machine harvested during the night on the 24th of March 2023. It is all sourced from the ‘Old block’ Riesling from the Hayview vineyard, which is situated in the Mount Barker sub-region of the Great Southern. Hayview vineyard is Sustainable Winegrowing Australia (SWA) certified.
