When the confluence of time, place, and relationships presents a Cabernet opportunity; take it! Fruit from mature vines was crushed to open vats and fermented with the influence of wild yeast and hand plunging. Gently pressed, the wine was then matured in French barriques (10% new) for fourteen months. The result is inky, pure, and quintessentially Margaret River Cabernet Sauvignon. Local. Knowledge. “A bold, expressive cabernet sauvignon. Grapes were hand-picked and wild fermented, followed by maturation in French oak barrels. The wine displays deep blackcurrant and cassis notes, complemented by cedar, tobacco, and a touch of dark chocolate. Firm yet velvety tannins provide structure and balance. A classic cabernet sauvignon that pairs beautifully with hearty dishes or can be enjoyed on its own.”
